Au moment de l'immersion soulever pendant quelques secondes le bouchon de verre de manière à compenser la pression due à l'échauffement, puis boucher hermétiquement le tube de manière à éviter les pertes d'éthanal formé. Retirer le tube, refroidir sous courant d'eau pour amener à une température voisine de 20 °C, ajouter 5 ml de la solution d'hydroxyde de sodium 2,5 M (3.1.2.2), mélanger et filtrer.
