In drying rooms, there is daily monitoring in order to oversee the appearance and aroma of the products, as well as to manage the maturation conditions, i.e. air temperature and humidity, and thereby avoid irregularities in drying. Regardless of the technique used, and whether the drying rooms are natural or ventilated, operators must adapt to variations in air temperature and humidity outside. These are measured daily.
Au séchoir, un suivi quotidien est également effectué afin de contrôler l’aspect et l’odeur des produits et de maitriser les conditions d’affinage (température et hygrométrie de l’air) et ainsi éviter les accidents de séchage. Quelle que soit la technique employée, que les séchoirs soient naturels ou ventilés, l’opérateur doit s’adapter aux variations de température et d’hygrométrie de l’air extérieur, capté quotidiennement.
